MUSHROOM & VEGETABLE STROGANOFF
Ingredients
  1. 200-300g Assorted Mushrooms (Button, White, Chestnut or Dried Mushrooms)
  2. 1 Onion
  3. 3 or 4 Stems of Celery
  4. Broccoli (as much as you like)
  5. 1 Carrot (Cubed)
  6. 250ml Single Cream (we use alpro)
  7. Heaped Teaspoon of cornflour
Instructions
  1. Quarter the mushrooms, cut the celery into chunks, the onion into mixed size pieces and the broccoli into florets
  2. Fry the mushrooms and onions in a little olive oil for two or three minutes
  3. Add the broccoli and celery, then cover the pan and turn down the heat, leave for 5 more minutes, stirring occasionally
  4. Add the cream, if the sauce is not as thick as you would like, put the cornflour in a cup and smooth to a paste with a little water then add to the stroganoff and stir in
Notes
  1. Serve with Steamed Rice, Sautée Potatoes or Pasta
Variations
  1. Add tofu or quorn chunks (we did in the photo)
