
MUSHROOM & VEGETABLE STROGANOFF

Ingredients
- 200-300g Assorted Mushrooms (Button, White, Chestnut or Dried Mushrooms)
- 1 Onion
- 3 or 4 Stems of Celery
- Broccoli (as much as you like)
- 1 Carrot (Cubed)
- 250ml Single Cream (we use alpro)
- Heaped Teaspoon of cornflour
Instructions
- Quarter the mushrooms, cut the celery into chunks, the onion into mixed size pieces and the broccoli into florets
- Fry the mushrooms and onions in a little olive oil for two or three minutes
- Add the broccoli and celery, then cover the pan and turn down the heat, leave for 5 more minutes, stirring occasionally
- Add the cream, if the sauce is not as thick as you would like, put the cornflour in a cup and smooth to a paste with a little water then add to the stroganoff and stir in

- Serve with Steamed Rice, Sautée Potatoes or Pasta
Variations
- Add tofu or quorn chunks (we did in the photo)
