CHRISTMAS CAKE

CHRISTMAS CAKE
Ingredients
  1. 1.5kg Fruit (Raisins / Sultanas / Currants / Glacé Cherries / Apricots)
  2. 320g Brown Sugar (Demerera with about a third muscovado or All Soft Brown Sugar)
  3. 5 Large Eggs
  4. 420g SR Flour
  5. 340g Margarine or Butter
  6. Sherry or Brandy(for soaking fruit)
  7. Spices (as desired, Cinnamon, Nutmeg, Cloves or use mixed spice) (10-30g)
  8. 1 Tablespoon Black Treacle (or as desired)
Instructions
  1. Soak the fruit in sherry for at least 12 hours.
  2. Beat the sugar and fat, then add the eggs followed by the flour, spices and treacle. Add the fruit bit at a time ensuring you do not add too much excess liquid.
  3. Bake at 160oC for 3 hours then turn down to 150oC for a further hour.
Notes
  1. This cake is best left at least 4 weeks before eating for the flavour to improve.
  2. Recipe based on a 9 inch cake tin, adjust proportions accordingly.
Tip
  1. You can add more fruit if you like, we like our Christmas Cake to be a cake and not a pile of fruit!!! You can also add nuts.
