
EASTER BISCUITS

Ingredients
- 230g SR Flour
- 110g Caster Sugar (plus extra for sprinkling)
- 100g Margarine or Butter (or a mixture of both)
- Lemon Juice (good splash)
- 1 Egg (or 40ml of egg replacer)
- Cinnamon (to taste, we like 2-3 teaspoons)
- Cassia Oil or Cinnamon Oil (Optional) a few drops to boost the flavour.
- 50-60g of Currants
Instructions
- Put the currants in a cup and cover with boiling water, leave to soak for a few minutes
- Rub the fat and flour into crumbs
- Add the sugar and spices (cassia oil if using) and stir together
- Drain the currants, add to the dry ingredients, then add the egg and lemon juice
- Combine together to make a ball of dough
- Roll out to desired thickness (about the thickness of a pound coin) then cut.
- Bake in a preheated oven at 180oC for 15 minutes, remove from tray and put on a cooling rack, sprinkle with caster sugar whilst still warm.
