1. 230g SR Flour
  2. 110g Caster Sugar (plus extra for sprinkling)
  3. 100g Margarine or Butter (or a mixture of both)
  4. Lemon Juice (good splash)
  5. 1 Egg (or 40ml of egg replacer)
  6. Cinnamon (to taste, we like 2-3 teaspoons)
  7. Cassia Oil or Cinnamon Oil (Optional) a few drops to boost the flavour.
  8. 50-60g of Currants
  1. Put the currants in a cup and cover with boiling water, leave to soak for a few minutes
  2. Rub the fat and flour into crumbs
  3. Add the sugar and spices (cassia oil if using) and stir together
  4. Drain the currants, add to the dry ingredients, then add the egg and lemon juice
  5. Combine together to make a ball of dough
  6. Roll out to desired thickness (about the thickness of a pound coin) then cut.
  7. Bake in a preheated oven at 180oC for 15 minutes, remove from tray and put on a cooling rack, sprinkle with caster sugar whilst still warm.
